Dinspiration! Spicy Peanut Butter Sweet Potato

This eating vegan shizzle is easy, especially if you like nuts and I love nuts.

So basically, if you add nuts to any veg it immediately makes it instantly amazing, so using this theory and having a lot of sweet potato in, I thought I'd nut up my sweet potatoes.

This recipe is pretty easy and doesn't require many ingredients. It's filling and we've had it for about 3 dinners so far, and no one has complained yet. It's also really good comfort food, so now the weather is on the turn and autumn is on it's way, it is definitely time to get your nuts out.

Spicy Peanut Sweet Potato
serves everyone for ages (I dunno, about 6 "normal" people)

1 onion, diced
4 garlic cloves, minced
1 inch ginger, diced
2 chillies, sliced, seeds included
5 sweet potatoes, diced
1 tin of tomatoes
2-3 tbsp peanut butter
salt & pepper
handful of pine nuts, toasted in a dry pan
some fresh coriander to garnish
olive oil





  1. In a big pan, heat some oil over a low-med temperature and soften off your onions, ginger and chilli. Add in your garlic and soften a little more.
  2. Add in the sweet potato and tomatoes, top with about half a tin of water, stir and bring to the boil.
  3. Once boiling, turn down to a gentle simmer, stir in the peanut butter and leave to simmer until the sweet potato is tender.
  4. Once sweet potato is cooked through, serve over a bed of rice and top with the toasted pine nuts and coriander.
  5. Eat it....forever....it will not die, and you won't want it to either.
