Simple, Cheap, One-Dish Dinner

A veggie recipe! Finally! Yay!

So I'm back in schools instigating a bout of family cooking with parents & children. I have very limited equipment, absolutely no means of cooking anything there and am working on preparing simple, one-dish, affordable, family friendly, vegetarian or halal meals. Yeah, it made my brain ache too.

Today I started with an old faithful which I had to adapt slightly, as usually I would pre-grill the aubergines and cook off the onions, garlic and sauce and let it thicken, but had to settle for just dicing the onion and garlic really finely and mixing thoroughly throughout the tomatoes. It'll be a little wetter, but hopefully, with careful cutting, no one should get a mouthful of raw onion or garlic.

This meal works out at about £4 in total, is really low in carbohydrate content and should be several of your 5-a-day, depending on how you portion it. Personally, I would serve it with boiled or roasted potatoes and salad for a nice, summery and filling dish. Feel free to adapt it to use herbs, spices and cheese of your choosing, You'd have to do something very wrong to make it unpalatable. Here is my extremely simple....

Aubergine & Courgette Bake
Serves 4-6

2 aubergines, cut into 1cm rings
1 courgette, cut into 1cm rings
1 garlic clove, finely diced
1 onion, finely diced
1 tsp of Italian herb seasoning
1 pack of feta cheese
salt & pepper
2 tins of tomatoes

  1. Pre-heat your oven to gas mark 4 or 180C. Cover your aubergine rings in salt and leave to sit for 15 minutes or so.
  2. In a bowl mix together your tomatoes, onion, garlic, herb seasoning and some black pepper. I wouldn't add salt, until I had tasted the end result, as with the feta and the salted aubergines, it could be too over-powering
  3. After the appropriate amount of time, rinse your aubergines thoroughly and pat dry.
  4. Lay some aubergine rings in the bottom of your oven-proof dish. Then add a layer of courgette. Then ladle on a little sauce, and sprinkle on a little feta. Repeat until you have used all of your ingredients.
  5. Put in the oven for around 40 minutes to an hour, or until bubbly and oozy. Actually, it really depends on how well you managed to thinly and evenly slice the aubergines.
  6. Eat it! That's it! Easy or what?!
