Cauliflower Not Cheese

Shock and horror! I have very little cheese in my fridge. This is unprecedented. I was all a muddle; what on earth could I do with my lovely cauliflower now? It has to have cheese sauce, otherwise we'll all be terribly disappointed. I know, I'll fake it. It just has to look like cauliflower cheese and I'm golden.


Cauliflower Not Cheese
serves 2-3

1/2 cauliflower, broken into florets and stalks chopped
1 tbsp butter
1 tbsp flour, I used Doves Farm GF Plain
1 onion, finely diced
3 garlic cloves, minced
up to a pint of milk
salt & pepper

  1. Bring a pan of salted water to the boil and simmer your cauliflower until tender. Lay out in an oven proof dish and put aside
  2. In a small saucepan melt our butter, add your onion and garlic and soften until very fragrant. Add your flower and stir to thicken and incorporate
  3. Slowly add your milk, stirring continuously until desired thickness is reached. I used hardly any milk, as I wanted a dense, gloopy coating. Season.
  4. Pour your gloop over your cauliflower and pop under a moderate, pre-heated grill until golden and bubbly. Easy. A great little side dish, goes well with my super simple veggie burgers too.
