Long Overdue 5:2 Recipe
I know it's been ages, but due to Mr Munch being away for work a lot, I've not really been making meals, and mostly have just portioning myself with little bites of smoked salmon and crackers.
So, to remedy this here is my super simple recipe for;
If you want a vegetarian alternative, try swapping out the fish for boiled egg, spinach and lentils, and switch the stock to a veggie one.

Skinny Minny Fish Pie
Serves 2 piggies, 3 light lunchers
100g prawns (70)
100g haddock (75)
60g leeks (15)
60g onions (25)
100g parsnips (66)
200g Swede (42)
1 garlic clove, peeled and halved (4)
500ml fish stock (35)
60g celery (10)
2 tbls yoghurt (17)
1 bay leaf
salt & pepper
Total = 359
Between 3, 120 per person

- Rinse and chop up your onion, celery and leeks. Pop in a saucepan, cover with the fish stock, add the bay leaf, season and slowly bring to a boil on a low heat.
- Peel and chop the parsnip and swede, put in a saucepan with the garlic, cover with salted water and simmer until mashable. Yeah, I'm making that a word.
- Once your stock mix is bubbling away, pop your fish and prawns in and cook for 5 minutes or until it breaks up easily.
- Drain the parsnip, swede and garlic, season, add the yoghurt and whizz up into a puree or mash.
- Preheat your grill to moderate, fill an oven-proof dish with your fish and stock, and then smooth your mash mix in a layer over the top. Place under the grill for 10 minutes, or until slightly coloured.
- Whilst your pie is grilling, steam your chopped and washed Russian kale. When serving sprinkle with a little salt, pepper, garlic and onion powder.
- Eat it! Be amazed at the flavour of this practically calorie free dinner! Yummers!
