Beastly Salads

I don't think any of you have been doing salads properly. Seriously, I've eaten loads of them lately and I've put on about a stone. I mean that could be due to everything else I've consumed as well as the salad, but I'm pretty certain it's because I've totally nailed salads with maximum nutritional value. Yeah, that must be it.

So, have a look-see at the salads, and feel free to ask any questions.

All of these salads were better than any other salad I've ever had. Pre or post veganism. There was nothing missing from them, and despite just being rabbit leaves, they are incredibly satisfying. I'm not sure what's happened to me. I may need a lie down.

BBQ Tofu with Asian Slaw







I'm sorry I can't remember my BBQ sauce recipe that I marinated the tofu in, but there are loads out there and you could always get one from a jar. This salad inspiration is dedicated to the now sadly closed Give Kitchen where I sampled something similar. Give Kitchen was a great concept with excellent results and I hope someone saves them.

Jalapeño Poppers & Crispy Tofu with a Tomatillo & Garlic Gratin




I used Tesco's cheddar style cream soya cheese and Just Gluten Free Bakery loaf ends that had been in my freezer for this bad boy of salad town. Oh, and more olive oil than a small grove. Fatty, salty, flavoursome and amazing.

Garlic Mushrooms, Warm Salsa, Houmous, Smashvocado & Raw Beetroot Crackers




This one looks the least exciting, but was actually deceptively tasty. I mean, guys, I ate beetroot and I liked it for Christ's sake. I wish these were bigger. I must admit that I am bit disappointed "activated" doesn't mean the crackers are secretly awesome Transformers. Oh, well. Next time.
