Breakfasts Without Bacon; Cheese & Green Things Topped Toast

OK, so I'm sure you are all aware of the amazing combo that is cheese and cucumber, but do you have it for breakfast? No? Well, you should. It's light, refreshing, filling and scrumptious. Convinced? No?Alright, I admit it, this post is less of a recipe and more of a chance to rave about a very local cheese, made from very local milk and available at a very local market.

So, what is this cheese I am loving so much? It is one of Blackwoods Cheese Company's soft offerings which are available at Brockley Market. The milk they use is from Commonwork, an organic community farm in Sevenoaks, the cheese is made in Brockley and the results are stunning. Today's toast topper was their jarred soft cheese in oil. I'm sure it probably has a proper name, but I don't know it and they also have a creamy soft cheese with chilli that comes in a tub, which I also don't know the name of, but who cares what it's called when it is also stonking and delicious on toast?! So I don't suppose it matters too much if you mix them up, if it's Blackwoods you're guaranteed to be getting a beautiful artisan cheese. In fact, you might as well buy both. I haven't tried any of their hard cheeses yet, but I look forward to popping there this weekend and maybe sampling a blue or something else creamy and dribble inducing. Anyway, you should all get down there and buy these cheeses pleases. But make sure you leave some for me, or I may gnaw through your bag for life and steal your jar of curdy happiness. Ahem. Cheese & Green Things Topped Toast

Blackwoods, Cucumber & Spring Onion:
2-3 tbsp Blackwoods soft cheese in oil
2 slices of toast
12 slices of cucumber
1/2 spring onion, snipped
drizzle of oil from cheese jar
Black pepper
  1. Take your toast, and lay on six slices of cucumber to cover
  2. Spoon on some yummers cheese and sprinkle over some spring onion bits.
  3. Drizzle over a little of the cheese oil and grind black pepper over the top
  4. Stuff in your face making sure to carefully collect any stray bits that may try to escape off your chin- you will not want to waste it

Mozzarella & Basil:
3 slices of mozzarella
1 slice of toast
2-3 basil leaves
drizzle of basil oil
Black pepper
  1. Finely chop your basil leaves.
  2. Lay your slices of mozzarella on your toast, covering the bread.
  3. Sprinkle over your basil leaves and drizzle over some oil, finishing with some black pepper
  4. Yup. Stuff it in your face. The time has come. For this.
