Breakfasts Without Bacon; An Alternative Fry Up

So, as you have probably seen, yesterday I posted my scrumptious chilli, squash and bean burger recipe in aid of International Vegetarian Day. Well, today, I'm going to be showing you how I also had that burger for breakfast and used salted kale as a rather fabulous alternative to bacon.

I really believe that salty, iron rich greens are fantastic in place of bacon, especially if you cook them in ghee. The texture may not be comparable, but they hit all the same oral receptors in my opinion, and I am honestly not missing the meat. Apart from when I just cannot be bothered to cook and want something to immediately stuff in my face, but that's usually only ever due to having to wash up first, and that's a rather easy mountain to overcome in the grand scheme of things. Especially if I poke Mr Munch and point out he hasn't washed a pot in weeks, whereas for me, it's generally minutes.

Anyway, here's my plateful of yum for a satisfied tum! (Later possibly a windy bum! Oh, come on! it is chilli and beans.)


Breakfasts Without Bacon; An Alternative Fry Up

you will need:
leftover bean burgers
some kale, thick stems ripped out
half an onion, sliced
a handful or two of mushrooms
one slice of toast
an egg
salt
ghee
olive oil

  • Gently heat a little oil in a frying pan and place in your bean burgers to cook for up to 5 minutes on each side.
  • In a separate pan heat some ghee and oil and add in your onions and mushrooms
  • Generously grind salt over your kale and add in with your mushrooms and onion to soften.
  • Once your burgers are nearly done, pop in your eggs and place a lid on your pan to cook the top of the eggs without turning- see, you're learning things. Bet you weren't expecting that!
  • Serve on your toast and think how much better this fry up is compared to the one you had at that b'n'b in Margate that time. That was an experience to put even the most committed carnivores off their bacon. Thank goodness for greens and bean burgers, eh?
