Breakfasts Without Bacon; Bean Feast

In my quest to replace my Heinz baked beans with an organic and non Monsanto funding alternative, I have built up a fair collection of tins of beans to try.

My first taste test was Whole Earth's beans in a sundried tomato sauce, apparently. In all honesty, I found them a bit too sweet and I don't like that they have a fair amount of soya in them. I'm all for a bit of miso, tamari or tofu, but I don't like soya being used like wheat is, as a cheap, bulking ingredient. We all know that one of the biggest GM crops is soy- not a problem here in an organic product- but it's also been proven that too much of the stuff can mess with hormones and digestion and cause a variety of problems in both men and women, so I try to avoid anything using it as a bulking agent. Over consumption is bad folks. Everything in moderation. Except cheese. Nothing as delicious as cheese can ever be bad for you, right?

Anyway, enough analysing my bean buying choices; on with my filling, cheap and easy veggie breakfast recipe! Yay!


Bean Feast
Serves 2 minimum
Ingredients:
1 tin of baked beans
1 rib of celery
1 onion
2 garlic cloves
8 chantenay carrots, sliced thinly length ways
1 portobello mushroom
1 egg per person
olive oil
salt & pepper
parmesan (optional)

To serve:
2 hash browns per person
or
Bubble & Squeak
or
Slice of toast
  1. Heat a pan on medium and add a little olive oil to it. Finely chop your onion, garlic, and celery and fry off in the oil.
  2. Add the carrots to the pan and fry off a little, before adding just the bean juice to the pan and simmering for 5 minutes.
  3. Add in the mushrooms and the beans and stir to mix well. cook until beans are heated through. Season to taste.
  4. Make a small well in the bean mixture, crack in an egg and put the lid on your pan until the egg is cooked to your liking.
  5. Serve with your choice potatoes or bread and a few shavings of parmesan. Easy beansy!
You could easily add your favourite herbs or spices to this, but given the sweetness of the beans I was using, I left it as is.

And before you tell me to make my own baked beans, I can and do, but sometimes, you just don't have the time, space, inclination or clean cookware. We're all allowed some shortcuts occasionally.

  1. Great pics! My husband was telling me about bubble and squeak, which you mention as a side dish. We'll have to check that out when we visit the UK next year!
